Locally in Indonesia, potato starch is also commonly called SANFEN
by the Chinese chef. Potato Starch is a very refine type of starch, containing minimal amount of protein and fat. This gives the powder a clear white color. Cooked starch has typical characteristics of neutral taste, taste, high clarity high binding strength, good texture and minimal tendency of foaming and yellowing of this solution.
